Coconut Milk Poached Fish

I used tilapia in this recipe, but any mild white fish would be just fine.  Simple, healthy and delicious if I do say so myself!

I'm only a few days away from some exciting travel, so a light dinner seemed in order.  Do you have any fun foodie trips coming up?

Coconut Milk Poached Fish


- 1 fish fillet such as tilapia, cod, or swai
- 1/2 of a 14/5-oz. can of light coconut milk
- 1/4-in. piece of ginger, grated
- 1 tsp. ground white pepper
- 1 tsp. rice wine vinegar
- handful of snow peas
- cilantro, torn for garnish
- 1 chive, sliced for garnish
- 1 lime wedge
- salt

Heat the coconut milk, ginger, and vinegar in a saucepan.  Season with salt and the white pepper.  Add the fish and snow peas and poach until cooked through; approximately 5-6 minutes.  Flip the fish halfway through to make sure it cooks on both sides.

Plate the fish and pour a little of the broth over it.  Top with the snow peas and garnish with the cilantro, chive, and lime wedge.
