Homemade Granola

This is so easy and stress-free, I don't know why I've never thought to make granola myself.  I always just spend way too much on the packaged stuff.  I also love the fact that you can customize your granola.  Mixed foods like this, or trail mix, tend to have one or two ingredients I don't really love, so this way, I get everything I want!

Homemade Granola


- 1 egg white, beaten
- 2 c. oats
- 1 c. chopped nuts
- 1 c. dried, unsweetened coconut
- 1/3 c. honey
- pinch salt
- pinch cinnamon
- 2 T. brown sugar
- 1/4 c. grapeseed oil
- 1/2 c. dried cranberries
- 1/2 c. raisins

Preheat the oven to 300 degrees.

Line a baking sheet with parchment paper.

Combine the egg white, honey, salt, cinnamon, brown sugar, and oil.  Toss the nuts, oats and coconut in the mixture.  Scatter it evenly on the baking sheet.  Bake in the oven for 40-50 minutes, stirring occasionally.  Remove from the oven and cool completely.  Add in the raisins and cranberries.  

Store the extra in an airtight container.
