Potato Pancake with Smoked Salmon

This was a ridiculously easy meal to pull together.  Since this was just for me, I made one pancake with the toppings, but if I was entertaining, I would totally set out a toppings bar with a few options and make the potato pancakes and keep them warm in a low oven.  Any kind of roasted vegetables or other proteins would be suitable, or just topping it with a runny egg or some creamed spinach.



Potato Pancake with Smoked Salmon

Ingredients:


- 4 small red potatoes, grated
- 1/2 tsp. cayenne
- 4 slices of smoked salmon
- 2 T. sour cream
- 1 T. fresh horseradish (you can substitute prepared_
- 1 scallion, chopped
- salt
- pepper
- olive oil
- handful of parsley, torn for garnish

Season the potatoes with salt, pepper, and the cayenne.  Heat 1-2 T. of olive oil in a skillet.  Add the potatoes to the skillet and press them down into a single layer.  When the edges are turning brown, carefully flip the pancake.  Cook for another 2-3 minutes and slide it onto a plate.

While the pancake is cooking, mix together the sour cream, scallion, and horseradish.  Season with salt and pepper.

Arrange the smoked salmon on top of the potato pancake and garnish with the sour cream mixture.  Top the sour cream mixture with the parsley.
