Smoked Salmon Cigars

If smoked salmon (or other smoked fish) aren't your thing, you could easily make something similar in presentation using thin strips of cucumber, squash, or a thinly-sliced meat.  If you love smoked salmon like I do, then you're all set - and this is a nice departure from the usual smoked salmon-sour cream or cream cheese combo on toast.

Smoked Salmon Cigars

Ingredients (for four pieces):

- 4 thin slices of smoked salmon
- handful of pea shoots
- 4 snow peas, sliced julienne (into long, thin pieces)
- 1 scallion, sliced julienne
- 1 tsp. soy sauce
- 1 tsp. rice wine vinegar
- drizzle of sesame oil
- 1 T. blended oil
- 1/2 tsp. honey
- 1/2 tsp Sriracha or other hot sauce
- 1 T. sesame seeds for garnish

Whisk together the soy, vinegar, honey, and hot sauce.  Slowly whisk in the sesame and blended oil.  Toss the scallions, snow peas, and pea shoots in the sauce.  Lay out the smoked salmon and place a bundle of the veggies towards one end of each piece.  Roll the salmon around the veggies.  Drizzle extra sauce around the plate.
