Leftovers Thaicake

Have you ever gone out to eat and had one of those procreating dishes?  Pasta or Chinese, no matter how much you eat, it seems as though you've hardly made a dent in the plate.  I had a pad thai sort of noodle dish that played that trick on me, so I decided to turn it into this lunch this weekend.  It will work well with any leftover pasta or noodle dish.



Leftovers Thaicake

Ingredients:

- 3/4 c. leftover noodle dish
- 1 egg
- 1 tsp. soy sauce
- cooking spray

Heat a small skillet.  Spray the skillet with the cooking spray and dump in your noodles.  Drizzle the soy sauce over the top (if you are using Asian leftovers).  Press the noodles down into a flat layer with a spatula. Once the edges are brown and crisp, carefully flip the pancake.  You can turn it out onto a plate and then slide it back in if you are nervous about flipping it.  Cook another 2-3 minutes and slide it onto a plate.

Spray some more cooking spray into the skillet.  Add the egg and cook just long enough for the white to turn opaque; about 2-3 minutes.  Season the egg with salt and pepper and slide it on top of the pancake.
