Sake-Poached Shrimp and Snow Peas

Happy Thursday, everyone!  All day today, I've felt like it's Friday.

You would think that after my epic journey over the last couple of weeks, I would be refreshed and not struggling with Hump Day, but somehow taking that break has just made me want more vacation time!  If I follow my mother's idea of an ideal life, 1/3 of your time should be spent planning vacation, 1/3 going on vacation, and the final 1/3 basking in the loveliness of the trip and looking at all of your pretty pictures.  I've got to get on that....

Does that sound like a good balance to you?

Well, this dish isn't related at all to basking in my Ireland travels, but it was supremely easy and perfect for my first long week back.




Sake-Poached Shrimp and Snow Peas


Ingredients:

- 4 shrimp, peeled and deveined
- 1/2 c. snow peas
- 2 T. soy sauce
- 2 T. honey
- 1 T. rice wine vinegar
- 1/4 c. sake
- 1 T. Sriracha or other hot sauce
- handful of pea shoots for garnish

In a small sautee pan, combine the soy sauce, honey, vinegar, sake, and hot sauce.  Once it reaches a simmer, toss in the snow peas.  Let them cook for two minutes, then add in the shrimp.  Cook the shrimp for 1-2 minutes on the first side; until they turn pink and start to curl.  Turn them over and cook for another minute.

Plate the snow peas with the shrimp arranged on top.  Pour some of the excess sauce in the dish.  Tuck a few pea shoots in the center of each shrimp.
